I recently changed the theme to something more appropriate to what we do here. The new theme was food related with beautiful cherries and so forth. Unfortunately, the theme was unable to support some of the tools and features that I want to share with my visitors. Therefore, I was forced to change the theme yet again. I think I have found one that works for me – both from a functional standpoint as well as from a view of aesthetics. I apologize if this has been confusing for anyone. It was , however, quite necessary. Thank you for visiting!

He was family to me. I have had the great pleasure of knowing the Burke family for 20 years. To me, it is a great honor to have known Paul Burke on a very personal level. We shared many a laugh, he and I. He was also one of the greatest storytellers I have ever known! I could listen to him talk about life for hours on end. The pictures he painted with words could draw you into a story as though you were actually there… But the thing I will miss the most about Paul was his laughter and his smile. He loved life to the fullest and never had to apologize for the decisions he made. He truly did it “his way”. Paul and his wife Lyn and all of their family and friends have always treated me like family, and for that, I will be eternally grateful. I am proud to say that I loved that man. I know that wherever he is, he is smiling down at me now…

As most of you know, I spent a lot of years working as a chef. When you cook for a living you tend to learn a lot about health and nutrition as it pertains to foods. Most of it is really common sense though, right? I mean, you don’t need to be a doctor to know that a handful of raw veggies is better for you than a 16″ meat and cheese lovers pizza, right? You can pretty much figure it out for yourself… But just because you DO have common sense ( and even a doctors degree) doesn’t mean we always make the right choices. Heck, even the most disciplined fitness experts break down for cheeseburgers and beer sometimes! How does this relate to anything? Well, it was certainly a big part of my life. Most of the time, even if I was cooking healthy meals for everyone around me, I chose not to for myself, which made me think about an old saying. “Fat parents make fat children”. So I started thinking of my son and how he was raised around food. Thank god I didn’t always feed him like I fed myself! We introduced Alex to everything as a kid and I think he is grateful for that because his favorite food now is Sushi, which is one of the healthiest ways to eat that we know of. So, I was thinking about kids and snacks and what are the concerns of parents who want their kids to eat healthy, etc. Although everybody develops their own “favorite tastes”, I truly believe that when kids are young, they only know what they are taught, and exposing them to a larger variety of foods, the better off they will be in making healthy choices along the way. I never forced any of the kids to eat something that they didn’t like, but I always insisted that they at least try it. By doing so, it really opened up the kids’ minds to explore thing they otherwise may never have… Send me your thoughts….

Well, it turns out that my juicy little fruit isn’t just a hottie in a cute little dress! Peaches are loaded with Potassium, Fiber, Vitamins A & C and have no fat, no cholesterol and no sodium! In fact, one large peach (about 6 ounces) contains at least 10% of your daily allowance of Potassium, Fiber and Vitamins A & C and have only 68 calories! Excellent news! I never again have to look over my shoulder to see if anybody is watching as I gorge myself on these little beauties. And I know that the peach community will breath a sigh of relief knowing that I have vowed to remain faithful to my wife…
